Slimming Friendly Chicken Recipes!

Most pub grub restaurants will have a version of a BBQ chicken stack or hunters chicken on the menu.  Chicken breast with lashings of BBQ sauce, bacon and cheese- as you can imagine it is calorific and can be up to 30 syns!  

This is a syn free version using the cheese as your healthy extra, add 6 syns if not. The best bit is that you can cook it in the slow cooker to give you perfectly cooked and succulent chicken an melted cheese on top- heaven!  

I served mine with salad, sweet corn and roasted new potatoes.



I fancied some Nandos style peri-peri chicken so created this healthy and tasty dish.  I served the chicken with spicy rice, homemade syn free coleslaw, halloumi (28g as a HEA) and salad.  

It was lush, filling and there was enough left over for lunch the next day. 

This can be cooked in the oven or the slow cooker and If you have any sauce left over, add a few spoonfuls of fat free fromage frais to make a delicious dipping sauce!



I love anything involving BBQ sauce & Cheese, which sadly isn't usually all that healthy...

I'm always trying to think of exciting new Slimming World friendly BBQ sauce and cheese dishes. This is a delicious layer of flavoursome mash topped with slow cooked BBQ pulled chicken, melted cheese and bacon.

If you cook up a batch of pulled chicken a day or so before, this dish is a great midweek meal.


Batch Prepped Chicken Breasts

I love to order lean meat delivery boxes, but 24 is a LOT of chicken breasts, and I've made the mistake of chucking them all in the freezer before. That meant I had to defrost the whole pack to be able to use one breast, a rookie error.  

This time, I think I bossed it.  I found some takeaway style boxes that are perfect for storing chicken breasts, and all food leftovers. After I unpacked my delivery I took some time to help save some time throughout the week!


Autumn Chicken Bake



If you liked my  Easy Peasy Chicken Bake you'll love this Autumn Chicken Bake. This recipe has the same USP: minimal effort, maximum flavour and very little washing up.  

I made a big tray between 2 and there was plenty left over for lunch.


Chicken Parmigiana is a chicken dish based on the Italian Parmigiana. It consists of a breaded chicken breast, or chicken schnitzel, covered with a tomato-based neapolitan sauce and cheese.  

A meal that you may not expect to be especially healthy, but using food optimisation and both your healthy extras this dish comes in at only 3 syns! 



I based this meal on one of my favourite dishes from a local restaurant.  

The real thing is laced with cream, butter and syns.  This is a little taste of luxury with only 2 syns for the whole meal (including the potato dauphinoise)



Although I have never been to America, I feel as though I have learnt a lot about American culture from all the reality TV shows I watch! I was watching something the other day, I can't even remember what, and they were eating something off the KFC menu, 

'Famous Bowls-  Creamy mashed potatoes, sweet corn and bite-sized chunks of crispy chicken are layered together then drizzled with home-style gravy and topped with a perfect blend of three shredded cheeses'. 

This is not something I have ever seen on a UK KFC menu, nor is it remotely Slimming World friendly, so I set to work.



This is a delicious pasta dish that really doesn't taste like it's Slimming World friendly! 



A one pot dish that's super easy and delicious!
