Slimming World Friendly Recipe: Chicken Parmigiana Casserole



This is a delicious meal that I recently came up with as part of my post 'How to Prepare 31 Slimming World Friendly Freezer Meals'.  It is also great to cook and serve there and then, so thought I would share the recipe.  Also check out my Slimming World friendly Chicken Parmigiana.  

Chicken Parmigiana is a chicken dish based on the Italian Parmigiana. It consists of a breaded chicken breast, or chicken schnitzel, covered with a tomato-based Neapolitan sauce and cheese.  This is my tasty twist!


Extra easy Syn Value- 2 per person (plus a healthy extra A) 

Healthy Extras- A

You will need- 

1 Bag frozen pre cooked Chicken pieces or 1 pack skinless diced chicken breast
240g wholemeal bread, made into breadcrumbs
2 tbsp grated Parmesan 
2 tsp minced garlic
1 carton passata
1 tsp sweetener sugar
2 tsp mixed herbs
180g ball of mozzarella (45g per person as HEa) 
low calorie cooking spray
1 beef tomato, sliced

Method- 

Preheat oven to 180.

Using a casserole dish, layer with the chicken and pour over the passata.  Add the sweetener, garlic and 1 tsp of the herbs and mix.

Mix the Parmesan with the breadcrumbs and rest of the herbs. 

Top the chicken mix with breadcrumbs and layer slices of the beef tomato and mozzarella, careful to give 45g per person if using a healthy extra.

Cook for 20 minutes or until the breadcrumbs have browned and cheese has melted.
