This dish is inspired by "Marry Me Chicken", which is a popular dish known for its creamy and flavourful sauce that's so delicious, it's said to make someone want to propose marriage after tasting it.

This vegetarian version dish typically involves cooking halloumi in a creamy sauce made with garlic, tomatoes, herbs, and parmesan.

The original uses sun dried tomatoes which I switched for cherry tomatoes, as I find sun dried are very oily. You can always use them instead if you prefer.

The original also uses butter and oil, which I have cut out to save on some calories, without sacrificing any flavour.

What's even better is that this dish is ready in just 20 minutes from start to finish!

It's also a one pan wonder, so saves on the washing up, and is vegetarian.



Of course, you could also substitute the halloumi for chicken if you prefer.
