If you haven't already worked it out by now, I love a super simple, easy. healthy recipe. Especially one that is pasta based!
This is so simple to make, as you can throw all the ingredients in the tray, roast the veggies, add you pasta and it's done!
I had some vine tomatoes which needed using up, and this recipe was absolutely perfect for it.
This is a vegetarian recipe too, but you could easily add meat if required.
Swap the cheese for vegan cheese, and you can make this dish vegan friendly too.
A delicious roasted vegetable pasta bake that is low in calories,
slimming friendly, vegetarian and easily adaptable to be vegan too!
I love a good old pasta recipe, and this is a great addition to my pasta recipe roster! My housemate, who
also happens to be my oldest friend, is vegetarian, and created this delicious
pasta dish.

If you are vegan, this dish can be easily adapted to suit your needs. We used
milk and cheese, which you can replace for vegan cheese and oat milk.
This dish is really easy to prepare as well, perfect for weeknight cooking.
This dish has peppers, butternut squash, sweet potato and red onion in the
sauce, and you can add as many or as few extra veggies as you like.
Roasted Vegetable Pasta Bake Recipe
Inspired by the TikTok feta pasta trend and my Boursin pasta traybake going
viral on Facebook, I thought I would try and create another tasty cheese based
pasta traybake!
The beauty of these recipes is that you can really play around with the
flavours you add, adding more veggies, adding meat, leaving it out, you can
really do anything with it!
Funny story about when I was making this recipe, I use a light to light up the
food when taking a picture. I filmed this recipe as a video, and right at the
very end my light FELL into the food, splatting it everywhere and ruining the
melted cheese on top!

I could have added more cheese and put it back in, but then I would be adding
more calories back into it!
Add pasta water
The most important thing I have to stress with this recipe, and any other
cheese and pasta based tray bake, is the pasta water.
This stuff is like liquid gold, and can thicken up any pasta sauce, and help
create the smooth creamy sauce in this dish.
When you've cooked your pasta, drain some of the water off and save
it.
After trying the
feta pasta trend, then making my own
Boursin
twist on it (which you all seemed to love!) I decided to create another
delicious pasta traybake!
They're so easy to literally throw together, and perfect for weeknight
cooking.
This is my pesto pasta chicken, which works out to be 377 calories per serving
(4 servings) or approx 4.5 syns, (depending on the reduced fat pesto you use)

Inspired by the TikTok feta pasta trend, I thought I would try a slightly different version using one of my favourite cheese, Boursin.
I shared a video of me making it on my Facebook page, and it absolutely blew
up, with over 376000 at the time of writing this!
A few people asked me to write up a proper recipe, and while it is super easy
and doesn't really need a specific recipe, I thought I would give the people
what they want!
The beauty of this recipe is that you can really play around with the flavours
you add, adding more veggies, removing veggies or more.
In terms of quantities, it really depends on the size of your tray. If you play
the video below you will see it is as easy as throwing everything in together!

It is essentially a pasta dish created from baking cherry tomatoes, a whole
block of feta, and adding some pasta.
I have seen varying degrees of success with this online, but think I have
perfected the way to get a deliciously creamy sauce, instead of lumpy
feta.
To make this dish more 'slimming friendly', I reduced the amount of olive oil
used. You could cut this out entirely though if you wish, and use low calorie
cooking spray instead.

Tips for perfecting the Feta Pasta Trend
Good quality feta
To make this dish as tasty as possible you will need a good quality proper
feta cheese, not 'Greek salad cheese' or similar.
Pasta water
The key to this dish is to use the left over pasta water to add it into the
dish at the end. This helps to bring everything together and to create a
creamy sauce instead of lumps of feta. I added a fair amount at the end,
little by little, with lots of stirring.
Don't over season with salt
Feta is in itself very salty, so don't add too much salt when seasoning.

I wasn't even expecting to make it into a proper recipe, but it just tasted so
nice that I knew you lot would appreciate it too!!
Packed with onions, mushrooms and sweet potato this dish is super filling, yet
pretty low on carb too.
If you wanted to make this dish vegetarian friendly, you could double the
amount of sweet potato in the dish, and cut out the chicken.
It was ready in just 45 minutes too, meaning it is great for a weeknight
meal.
I used one of my favourite enamel baking trays to cook this dish, but you
could use any baking tin or tray.
I cooked off the chicken and veggies in a pan first to help reduce cooking time when everything is in the oven.
You could serve this on it's own or with a side salad.
