Slimming World Recipe: Stuffed Beef Tomatoes



This is a simple and quick lunch time meal or even a veggie starter! You can include whatever you want as the stuffing, the more superfree foods the better! I served it with a fresh salad.  This is syn free on EE

Sweet Potato & Carrot Soup









Recipe

You will need:-

150g couscous
4 beef tomatoes
1 garlic clove, crushed
1 tsp smoked paprika
4 spring onions, roughly sliced
Small handful of frozen peas 
Small handful of frozen sweetcorn
1 bunch coriander, roughly chopped
Dash lemon juice

Method:-

Preheat oven to 200C/fan 180C/gas 6. Put couscous in a bowl and pour over 175ml of boiling water. Cover and leave for 5 mins.

Cut each tomato across the top and scoop out the inside with a teaspoon.  Keep the tops of the tomatoes to one side.

In a bowl mix the tomato insides, garlic, paprika and couscous. Leave for 1 min then mix with a fork.

Put the spring onions, coriander and mint in a bowl, add the lemon juice and seasoning. Stir in the couscous, sweetcorn and peas.

Using a spoon, fill the tomato skins with the couscous mix. Top with the lids and place in a roasting tray.  Spray with low calorie spray and bake for 20 mins until soft.
