Turkey Meatballs in Tomato Sauce

I really fancied some wintry comfort food today. There is a definite chill in the air now that autumn is creeping upon us and this is a proper warmer! It is really easy to make and full of flavour, we both loved it! I added the cheese on top as my healthy extra a and the breadcrumbs as my healthy extra b.

You will need:-

500g Lean Turkey Mince
2 garlic cloves, finely chopped
1 small onion, finely diced
2 tins chopped tomatoes
salt & pepper to taste
1 teaspoon basil
1 teaspoon sweeter
1 vegetable Stock cube
1 tbsp tomato purée
2 slices of 400g wholemeal bread, blitzed to breadcrumbs (add 6 syns if not using as HEB, or leave out!)
1 egg

Method:-

In a bowl, mix together the turkey mice, 1 of the garlic cloves, bread crumbs, tomato purée and the egg and mix together.  Add a pinch of salt and pepper.

In a frying pan cook the onion and garlic on a medium heat until the onions have softened. Put in a saucepan. Add the 2 tins of chopped tomatoes, basil, stock cube, sweetener and simmer on a low heat.

Form the turkey mixture into small, evenly shaped balls.   Fry off in a frying pan on a medium heat for about 10 minutes, turning regularly to stop them from sticking or burning.

Once the are cooked all over add the tomato sauce to the pan, simmer on a low heat for another 10 mins.

Serve over some pasta of your choice, I recommend whole wheat spaghetti, and top with some cheeky cheese!
