Beef Kebabs & Giant Stuffed Sweet Chillies

On Monday night I really didn't know what I fancied for dinner. I put a little post out on my Facebook page to see if anyone wanted the recipe, and the post got 815 likes! So, as requested, here's the recipe!

You will need- 

For the kebabs-
400g extra lean beef mince
1/2 an onion, grated
2 garlic cloves, minced
1 tsp dried parsley
1 tsp smoked paprika
1/2 tsp cumin
Salt & pepper
1/2 tsp cayenne pepper
Kebab sticks
1 tbsp fat free fromage frais

For the stuffed peppers peppers

1 giant sweet pepper (cut in half serves 2)
1 coffee cup of cooked brown rice
30g feta per person (healthy extra A)
a few cherry tomatoes, chopped
1 small tin of sweetcorn
1 small tin of peas

Method- 

Heat oven to 200C/180C fan/gas 6

Combine all the kebab ingredients in a bowl and mix together well.  Leave in the fridge for 1 hour. 

Meanwhile, mix the rice, sweetcorn, peas, tomatoes and feta together and stuff into the halved sweet chillies

Once the meat has been in the fridge for the hour, gently pack small amounts of the meat mixture around the kebab skewers to make a 4-inch long sausage shape on each stick.

Wrap the stuffed peppers in tin foil and bake in the oven for 10 mins.

Cook the kebabs on a griddle pan (or, even better, a BBQ!) turning regularly to prevent any burning, and cook thoroughly

Serve on a bed of mixed salad.
