Creamy Mushroom Pasta | Slimming Friendly Recipe
Pasta for me is one of the best comfort foods there is. It is so versatile, and you can eat it will loads of added flavour, or very little.
I have posted loads of pasta recipes on here previously, and they are always a massive hit with the readers.
Tonight I wanted to create a simple, easy and vegetarian pasta dish that the whole family will love.

Creamy Mushroom Pasta Recipe

You will need:
1 onion, finely diced
100ml vegetable stock made up from a cube
1 yellow pepper, finely diced
250g mushrooms, sliced
1 garlic clove, finely grated
1/2 tub extra light cream cheese (Or use Quark instead if following slimming world and want to make it syn free)
300g Pasta of your choice
1/2 teaspoon dried Italian herbs
Salt & pepper
100ml vegetable stock made up from a cube
1 yellow pepper, finely diced
250g mushrooms, sliced
1 garlic clove, finely grated
1/2 tub extra light cream cheese (Or use Quark instead if following slimming world and want to make it syn free)
300g Pasta of your choice
1/2 teaspoon dried Italian herbs
Salt & pepper
Method:
Spray a frying pan with low calorie cooking spray, and add in the mushrooms, onion and pepper. Cook for approx. 10 minutes over a medium heat.
Add the garlic and cook for 2 mins.
Add the stock and reduce to a simmer.
Add in the extra light cream cheese (or quark) and keep on the lowest heat while stirring through. . Season with salt and black pepper.
Meanwhile, cook the pasta following pack instructions. Reserve 100ml of the pasta water.
Add the cooked pasta in the pan with the creamy sauce, and add a little bit of the reserved water to loosen and create your creamy sauce.
