Sausage Creamy Cajun Pasta | Slimming Friendly

Pasta is such a comfort food, you can make a massive batch and have it cold for days! I am eating a lot of pasta lately, thanks to the current lockdown the UK is in. I managed to order a lot of pasta through work to see me through.

I have created a Creamy Cajun Pasta before and had some sausages that needed using up, and just like that this dish was created.

The beauty of it is that you can adjust the spice to suit you, adding more or less.

Sausage Creamy Cajun Pasta | Slimming Friendly

I cooked this dish in my frying pan, using an extra pan to cook the pasta. Then you just need to add the pasta to the sauce and top with cheese.

You can use any low-fat sausage you like for this recipe, just adjust the calories if you are using a normal sausage.

You can use any pasta you like for this dish, it would also be delicious with spaghetti.

Sausage Creamy Cajun Pasta | Slimming Friendly

Slimming world cajun pasta. A delicious creamy Cajun pasta with low-fat sausages that are slimming friendly delicious creamy Cajun pasta with low-fat sausages that's slimming friendly.

Ingredients

  • 4 low-fat sausages, chopped into chunks
  • 180g pack light cream cheese
  • 1 red pepper, finely diced
  • 1 yellow pepper, finely diced
  • 1 red onion, finely diced
  • 1 red chilli, finely diced (leave out if you don't want spice!)
  • 4 tbsp tomato puree or passata
  • 1 clove garlic
  • 4 tbsp Cajun Spice mix (plus 1 for the sauce)
  • 50ml Chicken stock
  • 300g dried pasta
  • Low-calorie cooking spray

Instructions

  1. Heat a frying pan over a medium heat and spray with low-calorie cooking spray. Add the sausages and fry off with half of the Cajun seasoning. Once cooked, set aside.
  2. Add the red & yellow peppers, onion, garlic and chill to the frying pan. Fry of for 2-3 minutes.
  3. Meanwhile, cook the pasta as per pack instructions.
  4. Add the tomato puree, stock and cream cheese to the frying pan with the sausage and veg mix. Stir until a sauce is formed. Add the rest of the Cajun seasoning.
  5. Add some of the pasta water to reduce the thickness of the sauce if required.
  6. Once the pasta is fully cooked, add it to the sausage and sauce mix and stir through so everything gets an even coating of the sauce.
  7. Top with extra cheese
