Best Spaghetti Bolognese

I absolutely love Spaghetti Bolognese, it is such a simple dish and so full of flavour. My mum used to cook it all the time when I was growing up and I would always be so excited when I knew it was being prepared.

Everyone has their own recipe, so I thought I would share mine! This is my slimming friendly spaghetti bolognese recipe that I cook every time.

The beauty of this dish is that you can throw in any veggies that you have in the house. I always use carrots and mushrooms, but you can leave them out if you don't like them.

This bolognese recipe makes up a pretty big batch, which means there are plenty of leftovers that can be used the following days.

I love having it either in a wrap with some cheese or on some toast with melted cheese on top.

You will need:



500g 5% beef mince
100g dried spaghetti
Low-Calorie spray
1 large onion, finely diced
1 large carrot, finely diced
250g mushrooms, finely chopped
1 red pepper, finely diced
1 tbsp tomato purée
2 x 400g cans chopped tomato
2 Garlic cloves, finely chopped
1 tsp dried basil
1 tsp smoked paprika
1 tbsp of balsamic vinegar
3 tsp Worcester sauce
1 Oxo cube
400ml beef stock made from a cube
Optional: 40g Extra Light cheese per person

Method:


Spray a large frying pan with low-calorie spray and add the beef mince and a crumbled up OXO cube. Fry off until browned, then set aside.

Fry off the onion, pepper, mushrooms, carrot and the garlic. Add the tomato purée, and cook for 1 minute more, stirring to stop it from sticking.

Add the tomatoes, cooked beef and stock with the basil, smoked paprika, Worcester sauce and balsamic vinegar. Simmer on a low heat for at least 40 mins until thickened and reduced.

Cook the spaghetti following pack instructions when ready to serve.

Optional: Top with 40g extra light cheddar cheese.
