Creamy Pesto Pasta Recipe | Slimming Friendly


Is there any better comfort food than a big bowl of pasta? Even better when it's a big plate of creamy pesto pasta! Pesto is traditionally made with blended pine nuts, Parmesan and oil, so isn't the healthiest of meals. 

For this version I used a fat free Quark for the creaminess and sauce, with the basil and hereby flavour. I love to add loads of lemon to give it an extra zing. 

I know that a lot of people may not be a fan of quark, so you could swap the quark for a low fat cream cheese, and then just add the syns or calories.


You may notice there isn't that many veggies in the recipe, so if you are following the Slimming World plan, make sure that you serve it with loads of salad or other Speed Food. 

You can also mix up the recipe by adding meat like bacon or chicken. 

The pesto sauce itself can be used in loads of different recipes, like stuffed inside a chicken breast.

Creamy Pesto Pasta Recipe

You will need:



200g dried pasta
250g Tub of Quark
Large handful of fresh basil
Handful of fresh parsley
3 Garlic Cloves, peeled and whole
Juice of 1 lemon
Large pinch of salt and pepper
2tbsp of the water the pasta was cooked in

Method:

Boil the pasta as per the pack instructions.

Add the rest of the ingredients into a blender, a blitz until the sauce is smooth.

Drain the cooked pasta, but keep some of the water aside, then add the pasta back into the empty pan.

Stir the pesto sauce through the cooked pasta and serve. Add some pasta water to make it smoother.
