I based this meal on one of my favourite dishes from a local restaurant. The real thing is laced with cream, butter and syns. This is a little taste of luxury with only 2 syns for the whole meal (including the potato dauphinoise)
You will need:-
Method:-
Season the chicken breasts with salt & pepper then sprinkle with mixed Italian herbs.
Spray a pan with low calorie spray and place on a moderately high heat until hot but not smoking, then cook chicken , uncovered, until well browned (approx 8 to 10 minutes). Turn chicken over and cook until chicken is just cooked through (about 10 minutes more)
Meanwhile, spray another pan with low calorie spray and fry off the chopped onions on a medium heat until cooked but not browned
Add the mushrooms and garlic and cook through.
Pour in the chicken stock and allow to simmer for a few minutes
Stir through 2 tablespoons of creme fraiche and heat through, but don't boil
Place the chicken on your plate and cover in the mushroom sauce, serve with veg and my potato dauphinoise

250g mushrooms, chopped
2 level tbsp half fat creme fraiche
