Cauliflower Fried Bacon Dirty Rice | Healthy Fakeaway Recipe

Cauliflower rice is a gluten free and low carb way of enjoying rice dishes. It's not just rice that you can recreate with cauliflower, and I even once made a cauliflower garlic bread!

I have also made a cauliflower vegetable cous cous before, but never tired a cauliflower rice. I actually got a pre prepared packet of rice from Aldi, but most supermarkets now offer their own variations. 


I added loads of flavour and fried the rice, which really took away all 'cauliflower' taste. I was actually quite impressed with how 'un' cauliflower like it was.

If you like dirty rice, then this dish is petty similar. Instead of using beef mince, I used a little bit of crispy cooked bacon.


If you were just wanting to have a plane rice replacement, then all you need to do is microwave the pot and it's ready! It's much more simple than having to make it out of a cauliflower yourself.




I cooked the rice in the microwave before adding it to the frying pan, and also added an egg so it is similar to an egg fried rice from the Chinese.

With this dish you can really add as many and as much vegetables as you like. I used mushrooms, onions, peas, peppers and sweetcorn. The more colour you have in a dish, the better!

You will need:


1 pack of cauliflower rice
Handful of mushrooms
1 onions, finely diced
1 handful of frozen peas
1/2 a pepper, finely diced
Handful of drained tinned sweetcorn
Pinch of salt and pepper
2 Garlic clove, finely chopped
2 tablespoons Cajun seasoning
1 egg
1 cooked bacon medallion, chopped to small pieces

Method:

Spray a frying pan with low calorie cooking spray.

Add the diced onion and garlic and cook off for 3 mins.

Add the mushrooms and peppers and 1 tablespoon of Cajun seasoning.

Meanwhile, microwave the rice as per the cooking instructions on the pack. 

When the veg is cooked, add the sweetcorn and peas. 

Add the cauliflower rice to the pan, along with the other tablespoon of Cajun seasoning.

Mix everything together well. 

Move the rice and veg mix to one half of the pan. Crack an egg in the empty half of the pan, then use a wooden spoon to mix it and start to scramble it. 

Gradually add a spoonful of the rice mix at a time to the egg, and start to mix it all through.

When the egg is fully cooked, remove from the heat. Top with the cooked bacon and serve,
