I really love Greek food, and one of my favourite slow cooker recipes is my Greek Chicken recipe. 

It has all the flavour of a succulent gyros. I usually serve it with salad and in a pitta bread or wrap. I sometimes have some left over, so wanted to come up with a tasty new dish to use up the leftovers.


I love a one pot dish, so this Greek rice dish is the creation I came up with. Some tasty veg, stodgy rice and lots of yummy Greek flavours. 

I added some olives, which are usually 1.5 syns for 8. I used small slices and this dish serves for, so the syns are almost too small to mention. If you're eating all to yourself, then maybe add some syns!!

I added all the ingredients and left it to simmer. It came out sooo tasty. I posted it onto my Facebook page and loads of you wanted the recipe. I served this with some salad and halloumi as my Healthy Extra.

You will need:


Some of my cooked Greek chicken
2 tea cups of brown rice, rinsed and soaked for 20 minutes
½ onion, finely diced
1 red pepper, finely diced
1 yellow pepper, finely diced
1 garlic clove, minced
1 chicken stock cube
1 tsp Greek seasoning (If you can't find it pre-made mix 1 teaspoon salt, 1 teaspoon garlic powder, 1 teaspoon dried basil, 1 teaspoons dried oregano, 0.5 teaspoon ground cinnamon, 0.5 teaspoon black pepper, 1 teaspoon dried parsley)
½ cup frozen peas
2.5 cups water
6 black olives (the ones soaked in brine) finely sliced. 
2 tbsp chopped parsley
Low calorie cooking spray 


Method

Spray a saucepan with low calorie spray over a medium heat

Add onions, peppers and salt and cook for 2 minutes

Add the garlic and cook for an additional 3 minutes

Add the Greek seasoning, olives, peas, stock cube and cooked, drained rice, and 1 teacup of water.

Bring to the boil, reduce to simmer, cover and cook for 15 minutes

Take off the heat and allow to sit for an additional 5 minutes 

Add the cooked Greek chicken to the mixture and stir through the chopped parsley.

Serve hot and with a side of halloumi (remember to syn or to use as a healthy extra)
