This is my pesto pasta chicken, which works out to be 377 calories per serving (4 servings) or approx 4.5 syns, (depending on the reduced fat pesto you use)

After trying the feta pasta trend, then making my own Boursin twist on it (which you all seemed to love!) I decided to create another delicious pasta traybake!

Ingredients

  • Boneless skinless chicken breasts
  • Small jar reduced fat pesto
  • 200g dried pasta (cooked as per pack instructions, keep some pasta water though)
  • Handful of spinach
  • Handful of cherry tomatoes, chopped in half
  • 1 red onion, diced
  • Handful of mushrooms, sliced
  • 1 tbsp low fat cream cheese

Instructions

  1. Add the chicken to your baking tray.
  2. Add the pesto and then your veggies
  3. Put it in the oven for 10 mins for the spinach to wilt down, then move the veggies around,
  4. Put back in the oven at 180 for 35 mins.
