If you have access to any social media, you will probably have seen the Feta
Pasta Trend doing the rounds!

It is essentially a pasta dish created from baking cherry tomatoes, a whole
block of feta, and adding some pasta.
I have seen varying degrees of success with this online, but think I have
perfected the way to get a deliciously creamy sauce, instead of lumpy
feta.
To make this dish more 'slimming friendly', I reduced the amount of olive oil
used. You could cut this out entirely though if you wish, and use low calorie
cooking spray instead.

Tips for perfecting the Feta Pasta Trend
Good quality feta
To make this dish as tasty as possible you will need a good quality proper
feta cheese, not 'Greek salad cheese' or similar.
Pasta water
The key to this dish is to use the left over pasta water to add it into the
dish at the end. This helps to bring everything together and to create a
creamy sauce instead of lumps of feta. I added a fair amount at the end,
little by little, with lots of stirring.
Don't over season with salt
Feta is in itself very salty, so don't add too much salt when seasoning.

You will need:
300g cherry tomatoes, or as many as you can fit in your dish
200g block Feta cheese
1/2 tbsp extra virgin olive oil
Pinch of salt & pepper
Pinch smoked paprika
Pinch of Italian herbs
2 garlic cloves
Handful of fresh basil to serve
Method:
Preheat oven to 180 degrees.
Place the cherry tomatoes in your baking tray, then make a space for the
feta cheese in the middle.
Add the garlic cloves into the dish, peeled but left whole
Add the feta, and sprinkle with the salt, pepper, paprika and Italian
herbs.
Drizzle the oil over everything, the place in the oven for 20 minutes,
or until the feta has browned and the tomatoes cooked.
While the feta is cooking, cook the pasta following the pack
instructions, but keep the pasta water.
Remove the feta from the oven, then use 2 forks to mix everything
together, then add some of the pasta water. Keep stirring until it
starts to become a sauce.
Add the pasta, and keep the pasta water to one side still.
Mix well, and add more pasta water if required to bring everything
together to a sauce.
Serve while still hot.
