Leftover Turkey Ideas: Jamaican Spiced Pot Pies

I was recently sent an amazing turkey roast dinner by Donald Russell butchers, which meant I got to cook up a Christmas roast before the actual day, seeing as the review needed to be live in early December. I really love turkey, and when cooked right it can be a delicious and succulent meat.

There were plenty of leftovers from the roast, which meant I could come up with some new, super tasty turkey leftovers recipes, and get the recipes live ready for those of you searching for ideas. 

Of course there is the traditional bubble and squeak, but I wanted to get something a that was different from tradition (I once had burgers for my main Christmas meal on Christmas day one year, I like to break traditions!)

This is a delicious and warming pie, with Jamaican flavors with a creamy mashed potato topping. You could use left over roast potatoes as the topping, or boil up some fresh ones to make mash. This is a great boxing day dinner!

I like to put in as much of the leftovers as possible in this pie, so the veggies, stuffing, pigs in blankets, turkey- anything that happens to be left!

You will need:


Leftover turkey
Leftover pigs in blankets, if you have any
Leftover veg
100ml beef stock
Leftover roast potatoes/mash (or you can use fresh potatoes, peeled, boiled and mashed)
1 carton of passata


Jamaican Seasonings:
1 tbsp garlic powder 
1 teaspoons cayenne pepper 
1 teaspoons onion powder 
1 teaspoons dried thyme 
1 teaspoons dried parsley 
1 teaspoons sweetener
1 teaspoons salt 
1/2 teaspoons smoked paprika 
1/2 teaspoon ground allspice 
pinch Salt & Pepper
1/2 teaspoon dried crushed red pepper
1/4 teaspoon ground cinnamon

Optional: Top the mash with cheese


Method:


Pre heat the oven too 190 degrees

In a bowl place the left over turkey, veggies, passata and Jamaican spices. Mix well.

Put the mixture in an over proof pie dish, then top with either crush up roast potatoes, or mash.

Optional: Top the mash with cheese

Bake in the oven for 30 minutes, until bubbling.
