Thai Green Curry | Slimming World



I asked my readers- "What food have you missed the most since starting Slimming World?".  There was an overwhelming response and I am going to try my best to create as many Slimming World friendly versions of your favourite meals as I can.  The next suggestion for me to tackle was a Thai Green Curry.  I have adapted this recipe to make my own.

Thai Green Curry Recipe


Serves:- 4

Extra Easy Syns:- 2.5 per serving

Healthy Extras:- None


You will need:-


200ml light coconut milk 
400ml chicken stock
Low calorie cooking spray 
1 level tbsp Thai green curry paste 
2 green chillies, deseeded and finely chopped 
800g skinless chicken breast, chopped
2 tsp fish sauce 
1 tbsp sweetener 
Juice of 1 lime
1 onion, finely chopped
1 pepper, finely chopped

Rice to serve

Method:-

Spray a large wok or saucepan with low calorie cooking spray, add the green curry paste, chillies, onions and peppers and stir-fry over a high heat for 2-3 minutes.

Stir in the chicken and cook for 5 minutes or until the chicken is browned

Add the coconut milk and stock, fish sauce, aubergines and sweetener.

Simmer for 15-20 minutes, stirring occasionally

Remove from the heat, add lime juice

Serve with rice
