I love trying out new flavours and getting inspiration from things I see on TV. I heard about a tomato and maple sauce with meatballs, and had to try one out for myself.
I made this low syn and tasty version, that cooks perfectly in the slow cooker. I used a low sugar maple flavour syrup, but you could also use maple syrup and syn it.
You will need-
500g live lean beef mince
1 red pepper, finely chopped
1 tsp Italian herbs
1 red onion, finely chopped
2 cloves of garlic, crushed
pinch salt and black pepper
1 carrot, peeled and grated
½ a fresh or dried red chilli
1 sweet potato, peeled, cut into small chunks
500g of passata
1/2 litre of beef stock
2 tablespoons of balsamic vinegar
3 tablespoons Guilt Free Maple Flavour Syrup
Low calorie cooking spray
Method-
In a large bowl mix the mince, half the minced garlic, salt and pepper. Using your hands, mix all the ingredients together well. Roll into 12 even meatballs.
Spray a frying pan with low calorie cooking spray and fry off the meatballs until they are browned on the outside and sealed.
Add the meatballs with the rest of the ingredients to the slow cooker and leave for 3 hours on high or 6 hours on low.
