Pork Dirty Rice Recipe | slimming world pork mince recipes

A delicious slimming world friendly pork mince recipe that's perfect for calorie counting or low-calorie meals. 

This is a delicious recipe I created with some 5% fat pork mince I had in the freezer, that's really simple to prepare and very delicious.

As I write this, the UK has just been told to not leave our houses except for essential travel. Everyone except key works has to work from home, and things are really getting a little scary.

I hope that one day in the future when I look back at this recipe, I will read that first sentence and remember it as though this was a bad dream.

One good thing that has come out of the whole nation having to spend more time at home is that we have more time to channel our creative energies.

I did an Insagram live video the other evening while I was cooking my dinner, and some of you came along to watch. This is the dish that I cooked, so I wanted to share the recipe that I kind of threw together as I went along.

Due to shortages in food at the moment, I didn't have as much fresh veg as I would have liked for this.

You can find 5% fat pork mince in most major supermarkets such as Morrisons. When shopping for ingredients online, make sure to use Morrisons voucher codes to get money off your order for a healthy, tasty and affordable home-cooked meal

'Dirty Rice' is a traditional Cajun and Creole dish made from white rice which gets a "dirty" colour from being cooked with the flavours and meat. 

I used microwave rice when I made this on my Instagram live, but the recipe below is using the proper method of cooking it all together. Make life easier with the microwave rice and just add it at the very end, and cut out the stock.

You could also replace the pork for beef mince, or cut it out to make this dish vegetarian.

You will need:

200g Rice long grain rice, cooked and drained
500g 5% fat pork mince
1  Red Pepper sliced
1  Red Onion diced
2 Spring Onion, Finely chopped
1 Tin sweetcorn, drained
2 tsp smoked paprika
1 tbsp Cajun Seasoning
1 tsp minced garlic
1  Chicken Stock Cube, dissolved in 125ml water.
2 Tbsp Worcestershire Sauce
1 tsp balsamic vinegar
low-calorie cooking spray


Method:


Spray a large frying pan with low-calorie cooking spray, then fry the onions and pork mince and cook until browned.

Add the smoked paprika, garlic, and Worcestershire Sauce, Cajun seasoning and Balsamic. Stir and allow to cook for another minute.

Add the peppers, spring onion and sweetcorn and stock. Cook for a further two minutes.

Stir in the cooked rice, mixing well to ensure it is fully coated in the flavours. Leave to simmer for 2 mins until the rice has soaked up the stock and flavours.
