5 Healthy Ways To Use Jersey Royal Potatoes [Ad]

5 Healthy Ways To Use Jersey Royal Potatoes


1. Jersey Royals Patatas Bravas




You will need:

450g Jersey Royal potatoes, skin on, quartered
Low calorie cooking spray
Roasted Vine Tomatoes
1/2 Carton Passata
1 tin chopped tomatoes
2 tsp smoked paprika
2 tsp cayenne pepper  (reduce according to how spicy you like it)
Pinch salt and black pepper
1 small onion, finely diced
3 tsp minced garlic
Handful of fresh parsley
Juice half a lemon
2 tbsp fat free fromage frais


Method:

Preheat oven to 200C/180C fan/gas 6.

In a large bowl, add the chopped Jersey Royal potatoes.  Spray with low calorie cooking spray all over, and sprinkle with salt and pepper. Mix the potatoes up so that they are evenly coated with the low calorie cooking spray and seasoning.

Lay the potatoes out on a large baking tray and roast in the oven for 35-40 mins,

Meanwhile, add the passata, chopped tomatoes, smoked paprika, cayenne, onion, half the garlic and lemon juice to a saucepan.  Bring to the boil and then turn down to simmer on a low heat, until sauce has reduced.

To make the mayo, mix the mayo, rest of the garlic, and salt and pepper. 

Once the potatoes are roasted, lay them out onto a serving dish.  Top with the sauce and then the mayo, and sprinkle fresh parsley over the top!

2. Crushed Minted Jersey Royals


You will need: 

450g Jersey Royal potatoes washed and halved
4 whole garlic cloves, crushed
4 shallots, peeled and finely diced
table salt and sea salt
freshly ground black pepper
10g chopped flat-leaf parsley
10g chopped chives
10g chopped mint
2 teaspoon wholegrain mustard 
1 tbsp white wine vinegar


Method:

Put the potatoes and garlic in a saucepan filled with water. Add a pinch of salt. 

Bring to the boil and then reduce the heat to a simmer. Cook until soft , which is about 20-25 mins. 

Meanwhile, cook the shallots gently in a frying pan on a low heat. Add some low calorie cooking spray and cook off for 5 minutes.

When the potatoes are done, drain them, removing the garlic. 

Place the potatoes in a bowl with the shallots, wholegrain mustard and vinegar and crush with a fork or balloon whisk.

Season with table salt and pepper. Stir the chopped herbs into the potatoes.

3. Roasted New Potatoes


As many whole Jersey Roay Potatoes As many as you can fit in your tray.
1 pint/570ml of hot stock. I use 2 stock cubes with the pint of water to make up the stock
Low calorie cooking spray

Roast Potato Seasoning Mix: 

1 teaspoon garlic powder 
1/2 teaspoon onion powder
1 stock cube, crumbled up
large pinch of salt & pepper 


Method:

Preheat the oven to 190 degrees/gas mark 5.

Par boil the potatoes for 5 minutes. Once cooked, drain the water away. Shake the pan to fluff the potatoes up.

Mix together the garlic powder, onion powder, crumbled up stock cube salt and pepper. Sprinkle this over the potatoes, in the drained pan, and mix well to get an even coating.

Add the potatoes to the roasting roasting tin and pour the hot stock over the potatoes, ensuring they all get a covering. The stock should reach half way up the potatoes, to ensure perfect crispiness. Spray the tops of the potatoes with a generous amount of low calorie cooking spray, and add another pinch of salt and pepper. 

Place them in the middle of the preheated oven. Add another spray of low calorie spray after 20 minutes.

You will know the roast potatoes are ready because there will be no stock left in the tray and the potatoes will be crispy. I recommend keeping your eye on them during cooking. If the stock dries up too much, add a little more.

4. Potato & Pea Salad



You will need:

450g Tesco Jersey Royal Baby New Potatoes
100g frozen Baby Peas
4 tbsp Fat Free Fromage Frais
1 tablespoon quark
zest of 1 lemon
1tsp dried mint

Method:

Cut the potatoes in half, and cook in  lightly salted boiling water, until they are tender. Once cooked, rinse with cold water to cool them. 

Microwave the peas as per the pack instructions, then allow them to cool completely.

Mix together mint, lemon zest, fromage frais and quark to make the dressing.

Mix the potatoes and the dressing together.

5. Creamy Jersey Royal and Bacon Bake



You will need:

450g Jersey Royals, quartered
1 onion, finely chopped
A few fresh chives, chopped 
1 240g pack cream extra light cheese
Light butter spread
2 bacon medallions, cooked and chopped
Dash of milk
Salt and pepper to taste 
1 small garlic clove, finely chopped. 

Method: 

Preheat the oven to 190 degrees/gas mark 5.

Cut the potatoes in half, and cook in lightly salted boiling water, until they are tender. 

Add the potatoes to an oven proof dish. 

Mix together the cream cheese, bacon, garlic, milk, salt and pepper, to make a smooth sauce.

Add potatoes to an oven proof dish, top with the sauce, and then bake for 35 mins.
