Bacon & Potato Waffle Breakfast Stack Recipe slimming world breakfast


This was a breakfast that I had been planning in my head since the night before. I had planned everything out to the letter, and I couldn't wait to get snapping the perfect breakfast picture. 

The reality was a little different...

I had already tried and failed to poach 2 eggs. The eggs I had were clearly not that fresh, which makes them harder to poach. 

On my third attempt at the egg, I managed to DROP it on top of the stack, fracturing the egg yolk, spraying it all over everywhere, and ribbing my of that perfect 'egg porn' drippy yolk at on top! So instead, have this total mess of a picture!!

It tasted great, and that's the main thing! I used ready made potato waffles, as they are only 2.5 syns each, but you could also make my potato waffles.

You will need:

2 Potato Waffles
2 Rashers of Bacon, all fat removed
1/2 tin beans
A few Mushrooms
1 Egg for poaching

Method:

Cook the potato waffles as per pack instructions.

Spray a low calorie cooking spray in a frying pan and heat over a medium heat. 

Fry off the bacon and the mushrooms.

Cook the beans as per pack instructions.

Meanwhile, poach the egg. 

When the waffles are cooked, stack the potato waffles, beans, and mushrooms.

Top with the poached egg.
