I love a Chinese takeaway, but I love creating my own Chinese Fakeaways even more! After creating a yummy curry sauce for my last Chinese Fakeaway, I gave a traditional Chinese chicken curry a go. Check out my last fakeaway for the rice.

Syn Free Chinese Chicken Curry Recipe

You will need:



2 large skinless chicken breasts, diced
Low calorie cooking spray
1 onion, peeled and finely chopped
2 garlic cloves, peeled and crushed
1/2 tsp pureed ginger
1/2 carton passata
1 tsp Chinese Five Spice
2 tbsp sweetener
100g frozen mixed veg
500ml boiling chicken stock
1 level tsp cornflour, mixed with 2 tsp cold water
½ tsp turmeric
2 star anise
2 tsp mild curry powder

Method:


Spray a saucepan with low-calorie cooking spray and place over a medium heat. Add the onion and garlic and cook until soft. Add the ginger and cook for 1-2 minutes, then add the curry powder and rest of the spices, then cook for a further 1-2 minutes.

Add the stock and sweetener and passata and bring to the boil. Transfer the sauce to a food processor and blend until smooth. Return to the pan, add veg and diced chicken breasts.

Simmer on low for 15 minutes, stirring occasionally. After 15 minutes, remove a piece of chicken and check to make sure it is cooked all the way through before serving. 

Add cornflour mixed with water to thicken.
