If you’ve been on social media lately, you’ve probably seen Marry Me Chicken taking over everyone’s feed. That creamy, garlicky, sun-dried tomato dish that’s said to be so good, it could make someone pop the question after one bite!

The idea is simple: it’s rich, comforting, and packed with so much flavour that it feels like pure love on a plate. And honestly, I’m completely obsessed with the whole Marry Me concept — food so good it makes people fall in love (yes please!).

So, I had to give it my own Sugar Pink Food twist… and that’s how these Marry Me Meatballs were born. Instead of the classic chicken, I’ve gone for juicy beef meatballs with grated onion for extra flavour and chopped sun-dried tomatoes mixed right in.

They get beautifully browned before being simmered in the dreamiest, creamy parmesan sauce that’s full of garlic, spinach, and smoky paprika. It’s the ultimate comfort food — hearty, a little indulgent, and totally worth making any night of the week.

What I really love about this kind of recipe is how versatile it is. You can use whatever mince you prefer — beef, pork, turkey, or even a lean chicken mince to keep it lighter. Want to make it vegetarian? Swap the meatballs for veggie ones or even roasted chickpeas or lentil balls. 

ou can use reduced-fat cream or crème fraîche instead of full cream, and light parmesan or hard cheese alternatives to bring the calories down a bit without losing that gorgeous flavour.

And don’t be afraid to play around with the seasonings either! Add chilli flakes for a little kick, stir through some fresh basil or parsley for extra freshness, or even throw in some mushrooms if you fancy a bit more texture.
