This hot honey halloumi pasta is sweet, spicy, salty, and so easy to make. Golden pan-fried halloumi is tossed with pasta and a sticky hot honey sauce for a quick vegetarian dinner that feels a little bit special without taking ages to prepare.

It is perfect for busy weeknights, meat-free Mondays or whenever you want a comforting pasta dish with a bit of a kick. The halloumi adds a lovely salty bite, while the hot honey brings just the right balance of sweetness and heat.

Halloumi

Pasta

Use your favourite pasta shape. Penne, rigatoni, fusilli or spaghetti all work well. Shapes with ridges are especially good because they hold onto the hot honey sauce.

Hot honey

You can use shop-bought hot honey or make your own with honey and chilli flakes. Adjust the amount depending on how sweet or spicy you like your pasta.

Garlic and seasoning

Garlic adds extra flavour and works really well with the sweet heat of the honey. Season carefully because halloumi is already quite salty.

Vegetables

This recipe works well with added vegetables such as spinach, cherry tomatoes, peppers, courgette, mushrooms or tenderstem broccoli. Add whatever you enjoy or whatever needs using up.

Pasta water

Do not forget to save some of the pasta water before draining. It helps loosen the sauce and makes it coat the pasta properly.

How to make hot honey

If you do not have hot honey, you can make a quick version at home. Gently warm honey with chilli flakes until it loosens slightly and becomes infused with heat. You can also add a small squeeze of lemon juice or a splash of vinegar to balance the sweetness.

Start with a small amount of chilli and add more to taste. It is much easier to make it spicier than to tone it down once it is too hot.

Recipe tips

Save a mugful of pasta water before draining the pasta. Add a splash at a time to the pan until the sauce becomes glossy and coats the pasta.

Taste before adding extra salt, as halloumi can be naturally salty.

For a milder version, use less chilli or choose a mild hot honey.

For extra protein, you can add cooked chicken, prawns or chickpeas.

For extra vegetables, stir through spinach, roasted peppers, cherry tomatoes or broccoli.

Storage and reheating

This hot honey halloumi pasta is best served fresh, while the halloumi is still golden and soft. However, leftovers can be stored in an airtight container in the fridge for up to 3 days.

To reheat, warm gently in a pan or microwave until piping hot. Add a splash of water to loosen the sauce, as pasta can dry out once chilled.

Halloumi is always best freshly cooked, so the texture may be slightly firmer after reheating.
