Vegetable Fajita Recipe | Low Calorie Slimming Friendly

A delicious lower-calorie oven-baked vegetable fajita mix. An amazing vegetarian Fakeaway!

I love a good fajita, and I am trying to eat less meat each week. I have a whole section of vegetarian recipes which I would like to continue to build on.

This recipe is super simple, as I literally throw all the vegetables in a dish, make up a seasoning mix, and let the oven do all the hard work!

The most effort you will make is to chop up the veggies!

Of course, if you would like to add some meat into this dish, swap one of the vegetables for your protein and adjust cooking times to suit.

Vegetable Fajita Recipe


Syn Value: Syn Free (for the mix)

Healthy Extras: Adjust according to if you have cheese to serve


(calories for the mix alone)

 You will need:

1 red pepper, sliced
1 yellow pepper, sliced
1 red onion, sliced
1/2 aubergine, peeled and cut into small cubes
1/2 a butternut squash, peeled and cut into small cubes
4 tbsp tomato passata
Low-calorie cooking spray or a dash of olive oil
Juice of 1 lime


For the fajita seasoning:

2 tsp smoked paprika
1 tsp cumin
2 fresh red chillies finely chopped (Adjust to spice taste)
1 tsp chilli powder
1 clove garlic, crushed
1 vegetable Oxo cube, crumbled
Pinch of salt and pepper

To serve:

Tortillas, salad and cheese

Method:

Preheat oven to 180 degrees

Add the peppers, onion, aubergine and butternut squash (and any other veggies you may wish to include!) to an ovenproof dish. 

Make the fajita seasoning by mixing all of the seasoning ingredients together.

Sprinkle the mix over the veg and mix well to ensure it is all covered.

Add to the oven for 10 minutes.

Remove from the oven and then add the passata, another pinch of salt and pepper, and the lime juice. 

Add back to the oven for another 25 mins, or until all the veggies are cooked.

Serve with salad, cheese and tortillas!
