Slimming Friendly Chicken with Creamy Spinach & Parmesan Sauce, with sun-dried tomatoes and mushrooms.

So firstly, a confession. This dish isn't all that low in calories or syns, but I do feel as though it is worth it! I was searching for chicken inspiration on Pinterest, saw this recipe, and had it gave me the inspiration to make my own version.


I have tried to save on syns as much as possible, and you could save yourself even more by swapping sundried tomatoes for cherry tomatoes and reducing the amount of Parmesan.


I served it with some brown rice, and it was extremely delicious. I really love having rice with a creamy sauce.

Any time I used Spinach it always looks like I have added loads in, but in reality, it wilts down to almost nothing! So my advice is to smash in as much as you possibly can! The more the better.

Slimming Friendly Chicken with Creamy Spinach & Parmesan Sauce, with sun-dried tomatoes and mushrooms.

Ingredients

  • 4 chicken breasts
  • Pinch salt & pepper
  • 1 tsp oregano
  • 1 onion, finely diced
  • 4 cloves garlic, finely diced
  • 1 small jar sun-dried tomatoes, drained from oil, rinsed and chopped (swap for cherry tomatoes to save 1.5 syns per serving)
  • 120ml chicken stock (can be made up from a cube)
  • 120ml low-fat double cream
  • 60g grated Parmesan cheese
  • 1/2 large bag of spinach
  • Large handful of mushrooms, finely sliced

Instructions

  1. Season each chicken breast with salt and pepper and oregano
  2. Spray a large pan with low-calorie cooking spray. Add the chicken breasts and cook for about 4 minutes on each side until browned.
  3. Once cooked through, remove and set aside.
  4. Add some more low-calorie spray to the pan, then add the mushrooms, onion, garlic, and sundried tomatoes
  5. Slowly add chicken stock, double cream, and Parmesan cheese. Mix well to combine until smooth over a low heat.
  6. Add salt and pepper seasoning with salt and pepper. Add in the spinach and cook until wilted.
  7. Add the chicken breasts back to the pan and reheat for 2-3 minutes.
  8. I served mine with some brown rice. Serve the creamy chicken with spinach and parmesan sauce immediately, garnished with fresh chopped parsley.
