Creamy Cheese & Bacon Slimming World Coleslaw Recipe

Coleslaw, something that most of us enjoy straight out of a tub! But you may be surprised at just how fattening it can actually be!

It usually uses full fat coleslaw and sugar, which can add the calories on. This is my fully loaded coleslaw with bacon and cheese, making it extra special and extra delicious!

Of course, you could leave out both the cheese and bacon, yet still have a pretty impressive syn free coleslaw.

Supermarkets make life a lot easier now, and often offer a bag of coleslaw mix for you to make your own. This saves loads of time on preparation. 

You can use either red or white cabbage in this dish, I like having a bit of red in there for extra colour.

This coleslaw is the perfect side dish for any lunch or dinner. Once I had made a big bowl up, it took everything within me to not just sit and eat the whole thing!

Creamy Cheese & Bacon Slimming World Coleslaw Recipe

Makes 6 large servings

You will need:


Some supermarkets now offer a coleslaw veg mix that is ready prepared, so you could buy this instead of the carrot and cabbage. 
6 carrots, peeled
2 bacon medallions, cooked and chopped into small chunks
1 small cabbage (red or white)
2 tbsp cider vinegar
1 tsp mustard powder
200g fat free fromage frais
1 red apple
1 tsp smoked paprika
pinch salt and pepper
100g extra light cheddar, grated 

Method:


Grate the carrot and finely shred the cabbage into a large bowl. Season with salt and the vinegar. Mix well and leave for 10 mins to pickle slightly.

Add the mustard powder, smoked paprika, salt, pepper and cheese to a bowl and mix well.

Drain the vinegar off the carrot and cabbage, then add the apple, bacon, carrot and cabbage to the fromage frais and cheese mix. Mix everything together well and serve.

Keep in the fridge for up to 3 days.
