Slimming World Friendly Recipe: Creamy Beef & Mushroom Filo Pie

I wanted to create a low syn beef pie, that had a rich and creamy filling. This pie is super delicious and really simple to make. The filo pasty topping is lovely and crispy, but goes perfectly with the gravy filling!

Serves 4

You will need:

500g Lean Diced Beef
400g of mushrooms, sliced
1 onion, finely diced.
1 yellow pepper, finely diced. 
2 tbsp Worcestershire sauce
200 ml Beef Stock
1 Level tbsp Beef Gravy Granules
1 tbsp Fat Free fromage frais
Pinch salt & pepper 
1 tsp minced garlic
4 sheets of filo pastry
1 tsp Mustard  powder
1 Egg, lightly beaten to brush the pastry

Method: 

Preheat your oven to 220°C/Fan 200°C/Gas mark 7.

In a saucepan, fry off the mushrooms, onions and peppers until softened.  

Add the beef chunks and seal. 

Next add the stock, gravy granules, mustard powder, salt and pepper, garlic. Mix together and bring to a simmer to thicken.  Add more gravy granules if required, but remember to syn accordingly. 

Pour the pie mixture into a pie dish (I used a small glass pie dish).

Crumple up the filo pasty sheets, and place on the top of the pie mixture.  This doesn't need to be exact, but try and keep 1 sheet per quarter of the pie to ensure syn values are correct.
