Shredded Chicken & Cheese Chowder | Healthy Recipe

Chowder is traditionally prepared with milk or cream and thickened with broken crackers, crushed ship biscuit, or a roux. I have adapted to make it a little more slimming world friendly, replacing the milk with fat free fromage frais.
You can pack this with speed veg and I topped mine with melted cheese for an extra creaminess, but also tastes great without

You will need:-
4 slices bacon all fat removed and then diced
4 large chicken breasts
handful of new potatoes, diced
1 onion, diced
3 carrots, peeled and diced
1 large tin sweetcorn
1 litre of chicken stock (can be made up with cubes)
3 cloves garlic, minced
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
Pinch of cayenne pepper
1 bay leaf
salt and freshly ground black pepper, to taste
2 tablespoons corn flour
2 tablespoons unsalted butter
2 tbsp fat free fromage fais
40g extra light chedder per person/portion
Method:-
Place all of the ingredients, except the cornflour, fat free fromage fais, and butter, into your slow cooker dish. Make sure there is enough stock to cover everything, if not add some extra water
Cover and cook on low heat for 7-8 hours or high heat for 3-4 hours
30 mins before finishing time, in a small bowl whisk together corn flour and fat free fromage fais, plus 2 tbsp water. Stir in the corn flour mixture and butter to make the chowder thicker and creamier
Pull out the chicken breast and shred with 2 forks
Sprinkle with cheese and serve
