I would love to say that this was a carefully planned out meal, but in reality it is something that I threw together in the slow cooker one morning before leaving for work.  That being said, it tasted so good I knew I had to share it! You can adapt the spice levels to your taste, and leave it on to cook all day.

Serve with plenty of speed food on the side!

Recipe

Slow Cooker Mexican Chicken Stew

You will need:- 

1 Tin sweetcorn
1 red pepper, sliced
1 yellow pepper, sliced
2 tbsp smoked paprika
1 red onion, finely chopped
3 garlic cloves, finely chopped
½ tsp granulated sweetner
1 tsp chipotle paste 
400g can chopped tomatoes
4 skinless, boneless chicken breasts, sliced
a few coriander leaves
1 tsp chilli powder
1 tsp mustard powder
1 tbsp Worcestershire sauce
1 tin kidney beans
40g extra light Cheese 


Method:-

Add all the ingredients in a slow cooker and mix well.

Leave on low for 6-7 hours or high for 2-3.  Serve topped with cheese (as your healthy extra)
