Slimming World Friendly Recipe -Bacon Wrapped Jalapeno Popper Stuffed Chicken & Tex Mex Chips

I have been really rubbish lately and instead of coming up with new meals and recipes I have been cooking some of my old favourites.

I looked at 100s of recipes online to get some inspiration and came across this one.  Of course this is not a SW friendly recipe, but I soon saw to that.

By food optimising and putting my own spin on it, this delicious meal comes out at 3 syns.  I even created some syn free  Tex Mex fries to go with it!

Healthy extras- A

You will need:-

For the chicken-

2 chicken breasts, pounded thin
salt and pepper to taste
2 jalapenos, diced (if you like it spicy add more, if not add less!)
75g extra light cream cheese
2 tbsp fat free fromage frais
2 tbsp grated parmesan
8 slices bacon, all fat removed
1 garlic clove, chopped

For the fries-

1/2 kg potatoes, peeled and cut into chunky chips
1 teaspoon coarse sea salt
chipotle powder or chili powder
juice of 1 lime
1 clove garlic, minced
1 tsp smoked paprika

Method:-

Preheat the oven to 240°C/220°C Fan/Gas 9.

Lay the chicken breasts out flat, ready for stuffing.   Ensure all the fat is trimmed off your bacon!

Mix the fromage frais, cream cheese, parmesan, garlic, salt, jalapenos together. 

Spoon half of the mixture into one side of the chicken breast, fold over to seal.  Wrap the bacon around the chicken to cover in full and make sure there are no gaps!

Meanwhile mix all the spices and flavours for the chips.  Spray the chopped potatoes with fry light and sprinkle in the Tex Mex mixture, ensuring an even covering.  Bake in the oven for 30 minutes, turning occasionally, until golden brown on all sides

Grill the chicken breast or cook in a griddle pan until the bacon is crispy and the chicken is cooked in the middle, serve with salad and veg
