Garlic Chicken Breast & Sweet Potato Wedges | Slimming World





This is a proper weeknight meal, simple and quick to make.

I served it with delicious home-baked sweet potato chips.

Garlic Chicken Breast & Sweet Potato Wedges Recipe

Serves 2


You will need-


2 Large chicken breasts
150g mushrooms, sliced
2 Garlic cloves pureed or finely diced
2 tbsp extra light spread
Salt and pepper
Smoked paprika
tin foil
4 large sweet potatoes, peeled and cut into wedges
Salad to serve
1 tsp Italian Herbs

Method-


Preheat the oven to 200ºC/400ºF/gas 6.

In a large bowl combine sweet potatoes, smoked paprika, salt and pepper.  Spray with low calorie cooking spray.

Place each chicken breast on a large square of tin foil.  Combine the spread with the garlic, herbs, salt and pepper.

Top each chicken breast with mushrooms.  Add 1 tablespoon of the garlic butter to each chicken breast and then fold the tin foil to make a parcel around each breast.  Place on a baking tray.

Spread the wedges out on a large baking tray.  Cook both the chicken and wedges for 35 mins. Make sure you check that the chicken breasts are cooked all the way through before serving.

Serve with a large side salad.
