This crispy crunchy potato salad is everything you want from a summer side
dish: golden, smoky potatoes with crisp edges, tossed through a creamy,
tangy dressing with fresh cucumber, red onion and pepper for plenty of
crunch.
It is lighter than a classic potato salad thanks to reduced-fat mayo and
fat-free Greek yoghurt, but still tastes creamy, fresh and satisfying.
Perfect for BBQs, picnics, lunch prep or serving alongside grilled
chicken, burgers, fish or salad bowls.
The Viral Crispy Potato Salad Trend
Crispy potato salad has been going viral all over social media, and it is
easy to see why. It takes a classic creamy potato salad and gives it a
delicious twist with golden, crunchy smashed potatoes instead of the usual
boiled ones.
When I shared my version, my video went viral too, and so many people
loved the idea of combining crispy, smoky potatoes with a fresh, creamy,
crunchy salad mix. It is one of those recipes that looks amazing, tastes
even better, and is perfect for sharing.
Tips for the Best Crispy Potato Salad
For extra crunch, make sure the potatoes are well spaced out on the tray
so they roast instead of steam.
Letting the potatoes cool slightly before mixing them into the dressing
helps keep the salad creamy without becoming too soft.
This is best served fresh, but leftovers can be stored in the fridge for
up to 2 days. The potatoes will soften a little, but the flavour will
still be delicious.
Serving Ideas
This crispy, crunchy potato salad is perfect with BBQ food, roasted
chicken, grilled halloumi, salmon, burgers or as part of a buffet spread.
It also makes a great lunch with some extra protein on the side.
