The Best Brunch Recipe: Creamy Garlic Mushrooms


Ingredients:

225g mushrooms
2 cloves of garlic, minced
2 tablespoons reduced-fat cream cheese
1 teaspoon dried mixed herbs, such as basil or parsley
salt & pepper to taste
Low-calorie cooking spray

To serve:

2 slices of sourdough toast
2 poached eggs

Method:

Add a frying pan sprayed with low calorie cooking spray over medium heat.

Add the mushrooms and stir until they soften, moving them around the pan throughout to avoid sticking.

Add the garlic, herbs, salt & pepper and stir well.

Turn the heat down to low, then add the cream cheese and mix well. If the mushrooms look a little dry, add more cream cheese.

Serve on your sourdough toast, topped with a poached egg.
