You will need:


2 skinless chicken breasts
2 slices wholemeal bread
Pinch salt and pepper 
Pinch of paprika 
Pinch of Italian herb mix
1 clove garlic, finely diced (or can use lazy garlic or garlic granules)
1 egg, whisked
Low calorie cooking spray 


Method:


Preheat oven to 180 degrees

Cut the chicken breasts into thin strips, lengthways along the breast 

Crack the egg into a bowl and whisk

Blitz the bread in a blender until it becomes breadcrumbs

Add pinch of salt and pepper, paprika, Italian herbs and the garlic to the breadcrumbs, mix well

Add the breadcrumbs to a bowl

Dip the chicken strips in the egg mix, then into the breadcrumbs 

Repeat until all the strips are covered 

Lay the strips on out on a baking tray, then spray with low calorie cooking spray

Cook for 20 minutes, or until the chicken is cooked through
