Bacon Wrapped Stuffed Chicken Breast | Slimming World Friendly

An easy to make, tasty, stuffed chicken breast that's Slimming World Friendly. 

I had some bacon medallions, and I had some chicken breasts. I really fancied making myself a Hunters Chicken, but didn't have all the ingredients required. 

I looked in my fridge, and this is the dish that I created with the ingredients I already had in. I was so pleased with how it came out, I thought that it would be a recipe worth sharing!

I wasn't actually expecting that I would be sharing it on here, which is why there is only 1 photo!

I served it with super creamy garlic mash, broccoli and mushrooms.

You will need:

2 large skinless chicken breasts
4 Bacon medallions (more if needed to cover the chicken)
100g Low fat cream cheese
1 garlic cloves, finely diced
Pinch salt and pepper
Pinch smoked paprika
Handful of fresh spinach 

Method:


Make the chicken filling by mixing the cream cheese, garlic, salt, pepper and smoked paprika.

Lay out some cling film, then add your chicken breast on top. Fold the cling film over it, then use a rolling pin to bash the breasts out flatter. 

Remove the top later of cling film, and you would be left with a flatter breast. 

Lay out the bacon medallions, then place the flattened chicken breast on top, make sure there is enough bacon to cover the chicken.

You can then spread the cream filling on the chicken breast, and then add the spinach on top. 

Use the medallions to wrap up the chicken, use the cling film to shape the chicken and make sure it is wrapped properly. Place on a baking tray or oven proof dish. 

Cook for 25 minutes or until the chicken is cooked through.
