Pizza Hasselback Potatoes | Healthy Recipe


I am always trying to think of tasty new lunch recipes, and one of my favourites is a baked potato. There are so many different toppings, but this recipes takes both the baked potato and it's toppings to a new level!

I have tried a hasselback potato before with cottage cheese and salsa, but this one requires stuffing some of the slits with salami. Hasselback potatoes are a simple dish- whole potatoes cut to resemble a fan or accordion when roasted. 

The outside of the potato becomes crisp and brown while the inside is soft and creamy.  The name 'Hasselback Potato' comes from the restaurant where they were first introduced in the 1940s, Hasselbacken in Stockholm.

 Pizza Hassleback Potatoes Recipe

You will need:

For the potatoes:

2 medium baking potatoes
Salt & ground pepper
40g extra light cheddar cheese per potato, sliced
Low calorie cooking spray
3 Slices of salami per potato, each slice halved
80g extra light cheese, split in to 2 piles of 40g

For the sauce:

4 tbsp passata 
pinch salt & pepper
1 tsp Italian herbs

Method:


Preheat the oven to 200 degrees

Slice the potatoes across at about a cm thickness or as thin as you can. (if the potato is placed in a large spoon the edges of the spoon will prevent you from slicing clear through the potato).

Spray the potatoes with fry light and massage into the skin.

Place on a baking tray and cook for 15 mins.

Meanwhile, mix up the pizza sauce. 

Remove the potatoes from the oven and allow to cook to the point you can handle touching them. Put a knife in the slices and spread them open. Insert a few slices of salami into the gaps. I cut each salami slice in half, so that I could have more slices in the gaps.


Top the potatoes with the pizza sauce and then then cheese. 


Bake in the oven for 30 minutes, until the potatoes are cooked through and the cheese has melted. 

Serve with salad!
