If I had to pick one thing to use my calories on, it would be a few cheeky glasses of alcohol at the weekend. I very often save my calories up just to enjoy a little tipple!

One of the first things I wanted to try out was Slow Creamy Cider Chicken, a favourite I used to make before Slimming World. With around 40% fewer calories than regular cider, Skinny Booze gave me the perfect excuse to get the slow cooker out and give it a go!

The best thing about slow cooker cooking is that all you need to do is pop all the ingredients in and allow it to do it's thing!

Slow Cooker Creamy Cider Chicken Recipe


You will need:


 4 boneless, skinless chicken mini fillets.
Pinch salt & pepper
1 chicken stock cube
1 onion
1 red pepper
1 yellow pepper
1 garlic clove 
4 Bacon medallions
1 bottle Skinny Booze Cider 
2 tbsp fat free fromage frais

Method:


Chop the onion, garlic and peppers.

Chop the bacon into small chunks.

Add the peppers, onions, garlic, chicken and bacon into the slow cooker.

Pour in the bottle of cider, then top with a pinch o alt and pepper and the stock cube, crumbled.

Stir everything together and cook on a low heat for 6 hours, or high for 3.

Stir in the fat free fromage frais just before serving, and serve with potatoes and plenty of veg!
