This is a great week night meal and even better still, it involves a yummy BBQ flavour and melted mozzarella! It's really easy to put to together and this recipe makes 4 portions, perfect for extra lunches.
Slimming World recently gave an update on sweetner use... the syn value above has not taken this into account! As this recipe serves 4, the syn value wouldn't even be 1/2 per portion.
You will need:-
500g pasta
500g extra lean beef mince
1 onions, finely chopped
1 red pepper, finely chopped
160g light mozzarella
5 tbsp Worcestershire sauce
1 tsp mustard powder
500g passata/ sieved tomatoes
3 tbsp balsamic vinegar
2 cloves of garlic, crushed
3 tbsp sweetener
Salt and freshly ground black pepper
1 tsp smoked paprika
Method:-
Preheat oven to 180 degrees/ gas mark 4
In a shallow pan, brown off the mince. Add the onions and peppers and mix well
Add the Worcestershire sauce, 1 tsp mustard powder, 500g pasata/ sieved tomatoes, 3 tbsp balsamic vinegar, garlic, sweetener, Salt & pepper, and smoked paprika. Stir well and leave to simmer for a few mins.
Par boil the pasta for 5 mins or until slightly softened then mix with the BBQ beef sauce
Put the mix into a large casserole dish and then top with slices of mozzarella, to be sure you top with enough for your HE, weigh out 4x 40g of light mozzarella scatter in 4 sections, so you know 1 section = 1 HE.
Bake in the oven for 20-25 mins or until cooked through
