7 Day Slow Cooker Challenge! Day 4- Giant Cookie Cake

Day 4- Giant Cookie Cake


I found this recipe by Lucy Allen on the Slow Cooked Winders :) page, and I have adapted it slightly.  It tastes like a cookie but has the texture of a cake.  Those who have tried this cake loved it, and commented on how moist it was considering it had been cooking for 4 hours!  Thanks to Lucy from The Baking Queen Blog for the original recipe!

You will need:-

150g butter at room temp
75g light muscovado sugar
100g caster sugar
2 eggs
1 tbsp vanilla extract
340g plain flour
1-2 tsp baking powder
1/4 tsp salt
100g Smarties
1 Dash maple syrup

Method-

Beat together the butter, two sugars, eggs and vanilla extract till light and fluffy.

In a different bowl stir together the flour, baking powder and salt.

Next stir the flour mixture into the butter mixture. Stir in the Smarties and make sure they are evenly distributed and add the maple syrup. I kneaded it together till it all came together like a biscuit dough.

Grease your slow cooker bowl with butter, and cut grease proof paper to fit the base and put it in. Grease the top of the paper too.

Spoon the dough into the slow cooker bowl and flatten/press into the sides.

Slow cook for 3 hrs on low, with lid on.

Last 30 mins leave the lid ajar.

Take the bowl out the slow cooker and cool for half an hour.

Turn it out and slice to serve!
