Recipe: Sausage Casserole & Herby Dumplings

This great winter warmer is delicious, easy, and packed full of tasty vegetables.  This recipe is as easy as chopping some veg and putting it in a dish, however if you have a slow cooker you can put all the ingredients in before you go to work, and by the time you come home you will be greeted by the smell of this delicious casserole waiting for you- nothing better when you have just battled the elements to get home.


You will need:- 

6 good quality sausages
1 large Sweet potato
1 Large potato
3 Carrots
Handful of Mushrooms
1 Pepper
1 Red Onion
2 Cartons of Pasata (sieved tomatoes) and a dash of water
1 Teaspoon of smoked paprika
1 Teaspoon of fresh basil
1 Teaspoon of sage
1 teaspoon of chillies
Salt & Pepper to taste
1 clove of garlic
1 Stock Cube

For the dumplings:-
250 g self-raising flour
125 g butter, really cold
sea salt
freshly ground black pepper
2 tbsp chopped mixed herbs - try parsley, thyme and sage

Method:-
If you are baking this in the oven, brown your sausages off in a frying pan first. Remember not to prick your sausages as this will let all of those tasty juices out!

Chop all you veg into bite size pieces, crush your garlic clove and add into your slow cooker/casserole dish

Add the sausages, pasata, water and rest of the ingredients and stir.

Either put the casserole in the oven with a lid on for 45 minutes at 180 degrees, or slow cook on high for 3.5 hours, or low for 9 hours. 

Meanwhile you can make the dumplings and add the in the last 30 mins if cooking.
In a mixing bowl rub together the flour and butter together until it has the consistency of breadcrumbs then add the herbs and mix.

Gradually add water to form a dough, then mould in to dough balls. Add them to the casserole in the last 30 mins of cooking with the lid on. 

Serve on its own, or with crusty rolls. Delicious!
