Pepperoni Pizza Pasta


Feed 4 people, 5 Dinners for under £25 from Aldi Week 4 | £5 Budget Meals



Ingredients:

- 250g pasta
- 100g pepperoni, half sliced, rest whole 
- 200g mozzarella cheese, grated
- 1 onion, finely chopped
- 1 bell pepper, diced
- 400g tin chopped tomatoes
- 1 teaspoon minced garlic
- Salt and pepper to taste
- 1 teaspoon dried oregano (optional)

Instructions:

1. Cook the pasta according to package instructions until al dente. Drain and set aside.

2. In a large skillet, heat olive oil over medium heat. Add the chopped onion, diced bell pepper, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.

3. Add the sliced pepperoni, leaving some whole, to the skillet and cook for another 2-3 minutes until it starts to release its oils.

4. Pour in the chopped tomatoes and season with salt, pepper, and dried oregano. Simmer the sauce for about 10 minutes until it thickens slightly.

5. Add the cooked pasta to the skillet and toss until it is well coated with the sauce.

6. Sprinkle the grated mozzarella cheese over the top of the pasta, then add the whole slices of pepperoni on top. Cover the skillet with a lid and let it cook for another 2-3 minutes until the cheese is melted and bubbly.

7. Serve the Pepperoni Pizza Pasta hot, garnished with fresh basil leaves if desired. Enjoy your delicious pasta with the flavors of a pepperoni pizza!

Easy Ramen

Feed 4 people, 5 Dinners for under £25 from Aldi Week 4 | £5 Budget Meals


Ingredients:

- 200g noodles (such as ramen or udon)
- 200g bag of stir-fry vegetables (such as bell peppers, carrots, mushrooms, and spring onions)
- 2 stock cubes
- 4 eggs
- 1 teaspoon minced garlic 

Optional toppings: sliced spring onions, sesame seeds, chili flakes

Instructions:

1. Cook the noodles according to package instructions until they are just tender. Drain and set aside.

2. In a large pot, add the stir-fry vegetables. Pour in 1 litre (4 cups) of water into the pot and crumble in the stock cubes. Stir well until the stock cubes are dissolved.

5. Bring the broth to a simmer, then add the noodles.

6. In a separate pan, soft boil the eggs for 6 minutes in boiling water. Remove then add into cold water, then peel. Slice in half then add 2 halves into each bowl of ramen.

7. Garnish the Easy Ramen with sliced spring onions, sesame seeds, and chili flakes if desired. 


Salt & Pepper Chicken & Chips

Ingredients:

- 2 arge potatoes, peeled and cut into chips
- Chicken breasts, cut into bite-sized pieces
- Salt and pepper seasoning (to taste)
- 1/2 onion, thinly sliced
- 1 red pepper, sliced 
- Curry sauce 

Instructions:

1. Preheat your oven to 200°C. Place the potato chips on a baking tray, drizzle with a little oil or low calorie spray, and season with salt and pepper. Toss to coat evenly. Bake in the preheated oven for 25-30 minutes, or until golden and crispy, flipping halfway through cooking.

2. While the chips are baking, season the chicken pieces with salt, pepper, and a generous amount of salt and pepper seasoning.

3. Heat some low calorie cooking spray in a frying pan over medium-high heat. Add the seasoned chicken pieces and cook until they are golden brown and cooked through, about 6-8 minutes. Remove the chicken from the pan and set aside.

4. In the same pan, add a little more oil if needed and sauté the sliced onion until softened and lightly caramelized, about 5 minutes.

5. Return the cooked chicken to the pan with the onions. Toss everything together until the chicken is coated in the onions and any remaining seasoning.

6. Serve the Salt and Pepper Chicken with the crispy chips. Optionally, serve with curry sauce on the side for dipping or drizzling over the chicken and chips.

Creamy Garlic Mushroom Pie & Mash


Feed 4 people, 5 Dinners for under £25 from Aldi Week 4 | £5 Budget Meals


Ingredients:

- 200g mushrooms, sliced
- 200g chestnut mushrooms, sliced
- 1/2 onion, finely chopped
- 200ml vegetable gravy
- 1 sheet of puff pastry, thawed if frozen
- 1 teaspoon minced garlic 
- 100g light cream cheese
- low calorie cooking spray 
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)

Instructions:

1. Preheat your oven to 200°C (400°F) and grease a pie dish.

2. In a large pan, heat the cooking spray over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 2-3 minutes.

3. Add the sliced mushrooms to the pan and cook until they have released their moisture and are lightly browned, about 5-6 minutes.

4. Stir in the diced potatoes and mixed vegetables, and cook for another 5 minutes until the vegetables are slightly tender.

5. Pour in the vegetable gravy and stir until everything is well coated. Allow the mixture to simmer for a few minutes until the gravy thickens slightly. Season with salt and pepper to taste.

6. Remove the pan from the heat and stir in the light cream cheese until it's melted and incorporated into the vegetable mixture.

7. Transfer the creamy vegetable mixture to the prepared pie dish, spreading it out evenly.

8. Roll out the puff pastry sheet on a lightly floured surface to fit the size of the pie dish. Place the pastry over the top of the pie dish, trimming any excess pastry and crimping the edges to seal.

9. Brush the pastry with beaten egg for a golden finish.

10. Bake the pie in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crispy.

11. Serve the Creamy Garlic Pie hot, and enjoy a comforting and flavourful meal!

Pork Ragu & Sweet Potato Mash

Here's a recipe for Pork Ragu with Sweet Potato Mash using your specified ingredients:

Ingredients for Pork Ragu:

- 8 sausages, casings removed and meat crumbled
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 400g tin chopped tomatoes
- 200ml beef or vegetable stock
- Salt and pepper to taste
- Olive oil for cooking

Ingredients for Sweet Potato Mash:
- 3 large sweet potatoes, peeled and diced
- Salt and pepper to taste


Instructions:

1. Heat a drizzle of low calorie cooking spray in a large skillet over medium heat. Add the crumbled sausage meat and cook until browned, breaking it apart with a spoon as it cooks. Remove the cooked sausage from the skillet and set aside.

2. In the same skillet, add a bit more spray if needed and sauté the chopped onion, minced garlic, and diced bell peppers until softened, about 5-7 minutes.

3. Return the cooked sausage to the skillet. Pour in the chopped tomatoes and beef or vegetable stock. Season with salt and pepper to taste. Stir well to combine.

4. Simmer the mixture for about 15-20 minutes, stirring occasionally, until the sauce has thickened and the flavors have melded together. Add the mozzarella on top then allow to melt.

5. While the ragu is simmering, prepare the sweet potato mash. Place the diced sweet potatoes and minced garlic in a large pot of boiling water. Cook until the sweet potatoes are tender, about 15 minutes.

6. Drain the cooked sweet potatoes and then return them to the pot and mash the sweet potatoes until smooth. Season with salt and pepper to taste.

7. Serve the Pork Ragu over the Sweet Potato Mash, and enjoy this comforting and flavourful dish!
