If you are looking for £5 meals to feed the family, or cheap and healthy dinners for under £5, or ways to feed your family for £5, then this is the post for you! 

I've embarked on a mission that I'm really excited about. I've challenged myself to create family meals that are not only delicious but also budget-friendly, costing no more than £5 for all the main ingredients.

With the cost of living crisis at the moment, we are having to be more thrifty than ever, so creating recipes for cheap and healthy dinners that are not only cheap, but also delicious is a challenge we can all benefit from.

And to make it even more interesting, I'm exploring all the leading UK supermarkets, next up is Co-Op Food and this Sausage & Bean Bake with Roasted New Potatoes.

The best part of this adventure is that there are no set rules on cuisine or dietary restrictions. I'm all about variety and trying out different recipes, so we're in for a journey to create £5 meals.

Now I am including a couple of items that you should already have in your cupboards at home, such as stock, salt, pepper etc.

Sausage & Bean Bake with Roasted New Potatoes


Total cost: £4.66*

*The total actually came to £5.04, but my local Co-Op didn't have any individual onions so I had to buy a bag. There were 6 onions in the bag, of which I used 2. So if you use the price per onion, it comes in under £5.

Here are the ingredients I bought:


2 onions
1 tin of new potatoes
1 tin of carrots
1 tin chopped tomatoes 
1 tin baked beans 
1 pack 8 Richmond sausages


Items needed from store cupboard:


Salt and pepper 
Mixed herbs
 
Instructions:

Add the sausages to an oven proof dish, cook for 15 minutes at 180 to brown off.

Slice the onions.

Remove the sausages from the oven then sprinkle over the sliced onions.

Drain the carrots and add on top with the  beans and chopped tomatoes.

Season with salt and pepper, and pour over some boiling water. (You could also add a stock cube here)

Add the the oven and cook for 45 minutes at 200 degrees.

For the potatoes, drain them and dry them off fully with a tea towel or pepper towel.

Add to the air fryer tray and spray with low calorie cooking spray, salt and pepper.

Add to the air fryer for 20 minutes at 200 degrees until golden and crispy.
