I love a good Roast Dinner, but sometimes cooking a roast requires a whole lot of effort! A weekend ago I really fancied a roast dinner, but definitely did not fancy having to make one.

Instead of ordering in or going out, I decided to make a roast with as little effort as possible. A while ago I made my Autumn Tray Bake, and thought how I could use the same idea to create a roast dinner tray bake!

The idea is that you can throw a load of veggies and some meat in the tray with a little bit of wine, and leave it all to cook off.

One Pan Roast Dinner Traybake | Healthy Recipe

You will need:

2 large chicken breasts, skinless.
Handful of chopped carrots
Handful of chopped broccoli
Handful of green beans, chopped
1 red onion, chopped
Handful of chopped cauliflower
Handful of Jersey Royal potatoes, chopped
pinch Salt & Pepper
pinch Smoked paprika
pinch Mixed herbs
oxo cube
Glug of 100ml red wine to go in the bottom of the tray

Optional to serve: Yorkshire pudding & pig in blankets (not included in syns)


Method:

Preheat oven to 170 degrees.

Add your vegetables to the tray.

Top with the chicken breasts, then season with salt, pepper, mixed herbs, salt & pepper.

Add the red wine to the vegetables in the bottom of the tray.

Cook for an hour, or until the veggies have softened and the chicken is cooked through.

Use the red wine, veg and meat juices mixed and an oxo cube to make the gravy. Add a teaspoon of gravy granules if needed to thicken, and add the calories/syns.
