I love chocolate truffles, but often made with butter and double cream, they can be high in calories.  A few years ago I experimented and made some truffles with just chocolate and honey, and they came out super well. I wanted too try and create some again, but wanted to add a little bit more of a creamy taste. That's when I came up with the idea of adding some fat free yogurt. 

These are perfect to make as favours or small home made gifts for family and friends.

This recipe makes 24 small truffles, and they are only 36 calories per truffle. If you are counting calories, make sure that you readjust the calories if you make more or less truffles from the mixture.

I like to roll mine in a small amount of chocolate powder or sweetener to give them a nice finish. My one tip when making truffles is that you need to be quick any time you are handling them. Chocolate can melt quickly with the heat of your hands, so as little touching and rolling as possible! If possible, keep your hands cool.

You will need:

125g of fat free Greek yogurt
150g unsweetened dark chocolate
1tsp sweetener
Optional: Small amount of coco powder for rolling the truffles.

Method:

Break up the chocolate and place in a glass bowl, over a saucepan with boiling water, on a low heat. 

Remove from the heat and stir through the yogurt. Add the sweetener and mix. 

Add the bowl to the fridge and leave the mixture to set for at least an hour. 

Remove from the fridge, take teaspoon size amount of mixture and roll into 24 small balls. 

Optional: Roll each truffle in some coco powder or granulated sweetener.

Store in the fridge to keep firm.
