Pressure Cooker Peppercorn Beef | Healthy Recipe


It's January as I type this, and one of the most exciting foodie gifts I got for Christmas this year was my pressure cooker. This had been on my wanted list for a while as pressure cookers simulate the effects of long braising within a shorter time. As I am obsessed with slow cooker recipes, it made sense to try out the opposite!

It took a little while to get used to, but once I had figured out how to use it, I was on a roll. This is one of the first recipes that I created for the new pressure cooker, so wanted to share it with you. 

You can experiment with this recipe and add in extra veggies or flavours. I served mine with creamy garlic mash and roasted veggies.

You will need:


500g beef chunks, all visible fat removed. 
2 teaspoons cracked black peppercorns
1 large onion, thinly sliced
2 cloves garlic, sliced (can be made up from cubes)
750 ml beef stock
1 tablespoon Worcestershire sauce
250 baby new potatoes
Handful of button mushrooms, sliced
1 tablespoon fat free fromage frais
1 tablespoon tomato puree


Method:


Add all the ingredients (except the fat free fromage frais) to the pressure cooker. 

Follow you pressure cooker instructions to get it up to pressure

Leave to cook for 20 minutes in pressure cooker

To cook in the slow cooker, cook for 5 hours on low.

To cook in then oven, cook for 45 mins at 180 degrees

Allow steam to leave the pot slowly, then remove and stir through the fat free fromage frais and serve.
