A delicious slimming world friendly pork mince recipe that's perfect for calorie counting or low-calorie meals. 

As I sit down to write this post, it is January 2nd. The Christmas and New Year buzz has worn off, and it is back to reality with a bump! The festive chocolate has been eaten/destroyed and we are united as a nation in trying to be healthier. 

This year I also started a challenge for myself and all my followers called Sugar Pink January. So this year I am being extra healthy and taking care of my diet and health.

When we went to do our post Christmas food shop, I picked up some 5% fat pork mince. I have a few pork recipes, but wanted to come up with something other than sausages or burgers. It was New Years day when I decided to create something using the mince. 

Having just done my nails ready for a new start in the year, I enlisted the help of my boyfriend to roll the meat into balls for me!

The gravy takes a little while to make up, and you could easily substitute it for granules, as long as you add the extra calories or syns on. I also included some fat free fromage frais to give it an extra creamy taste.

You will need:

For the gravy:
1 large red onion sliced
2 cloves of garlic, crushed
700ml beef stock, can be made up from cubes
1 tablespoon of balsamic vinegar
1 tablespoon Worcestershire sauce
1 level tablespoon of tomato purée
Low calorie cooking spray 
salt & black pepper
1 tablespoon fat free fromage frais
1/2 teaspoon Italian dried herbs
For the meatballs:
400g 5% Fat Pork Mince
salt & pepper
1 teaspoon smoked paprika
1 teaspoon garlic powder
For the meal:
1 red pepper, finely diced
1 yellow pepper, finely diced
1 onion, finely diced

Pasta to serve

Method:

Spray a saucepan with low calorie cooking spray.

Add the onions and the garlic, and fry off for 3-4 mins over a medium heat, stirring constantly. If anything starts to stick, use some of the stock to loosen it up from the bottom of the pan.

Add the herbs, stock, balsamic, Worcestershire sauce, tomato purée, low calorie cooking spray, salt & black pepper.

Reduce the heat to low, cover and leave to simmer for 30 mins. Meanwhile, prepare the meatballs.

In a bowl, add the pork mince, pinch of salt & pepper, smoked paprika and garlic powder. Mix well.

Grab about a tablespoon of pork mixture, then roll into a ball using your hands. Repeat until all the pork mixture has been used. 

When the gravy is about 10 minutes from ready, heat a frying pan. Fry off the peppers and onion. Once cooked, set aside. 

Reduce the heat and then add the meatballs to the frying pan. Cook for about 3 minutes on each side. 

When the gravy is fully cooked, remove and blitz in a blender until completely smooth. 

Pour the gravy over the meatballs, then add the peppers and onion. Mix well and then stir through the fat free fromage frais before serving.

Serve with pasta and a salad.
