Waffle Iron Chilli Cheese Omelettes | Healthy Recipe



My boyfriend got me a waffle iron for Christmas last year, and I absolutely love it. I don't think I have ever used it for actual waffle batter, but it is so versatile that I have found many uses for it.

One of my favourite things to make in it are hash brown waffles, made with shredded potatoes. They come out so crispy and tasty, and are amazing topped with bacon and an egg. 

I have lot's of breakfasts ideas that are healthy and low fat. This dish is perfect for either breakfast, lunch or brunch.

Waffle Iron Chilli Cheese Omelettes Recipe

I decided to experiment with some different flavours for this recipe, and settle on the chilli cheese combination. The 2 things go so well together, and are complemented by the rich egg flavour. This dish is as simple as mixing up some eggs, cheese and flavours in a bowl, and pouring it into the waffle iron.

The egg fluffs up a lot when it is cooking, so try not to overfill it at first or push down too hard, otherwise you may end up with spillage! You can also adjust the spice levels to suit your taste, by adding more or less chillies.

You could also experiment and try out lot's of different flavour combinations, or add things like ham or other meats.

You will need:


3 Eggs
1/2 onion, finely diced
1/2 chilli, finely diced
Pinch of Salt & pepper
Pinch of Smoked paprika
Low calorie cooking spray
40g cheese per person

Method:


Spray the waffle iron with low calorie cooking spray.

Switch it on and allow it to heat up.

Meanwhile, crack the eggs into a bowl. Mix with all the ingredients.

When the irons have warmed up, pour int he egg mixture and close.

Cook for 2 minutes and check. Continue to cook until golden brown and cooked all the way through.

Serve with salad and sprinkle with any left over chilli.
