Creamy Garlic Mushrooms On Toast that are Slimming World Friendly 

This is a delicious recipe that is perfect for breakfast, lunch or brunch! Creamy garlic mushrooms on top of wholemeal toast. This recipe is low in fat, low in calories and also vegetarian.

It's really quick to whip up, and tastes amazing. I served mine with some fruit on the side and beans. It goes amazingly with a poached egg on top too!

You can tailor the amount of garlic to add. I love garlic, so I like to have quite a bit in the dish- unlucky to anyone that has to smell my breath!

You could also use the mushrooms as a great side dish to any main course.

You will need:

225g  mushrooms
2 cloves of garlic, minced
1 tablespoon of Quark, fat free cream cheese. 
1 teaspoon dried mixed herbs, such basil or parsley
salt & pepper to taste 
Low calorie cooking spray

To serve: 2 slices of 400g wholemeal toast per person
Poached Egg

Method:

Heat a frying pan over a medium heat. 

Add the mushrooms and stir until they soften, moving them around the pan throughout to avoid sticking. 

Add the garlic, herbs, salt & pepper and stir well. 

Turn the heat down to low, then add the cream cheese and mix well. You may need to add a little more quark if the mushrooms aren't fully covered.
